Toasted Muesli

This is a mix between a muesli and a granola. I don’t like the rawness of muesli, especially where the oats are concerned. Most store bought versions are also full of extra ingredients that don’t support optimal wellbeing. Making one yourself means you can tailor the recipe to your liking, I’m not a lover of dried fruit so I have omitted but feel free to add in some if you like.

Ingredients

2 cups jumbo oats
1 cup chopped nuts (almond, macadamia, pecans are my favourite)
½ cup sunflower seeds
½ cup pumpkin seeds
¼ cup sesame seeds (mix of black and white are nice)
1 tbsp cinnamon
1 tsp sea salt
¼ cup maple syrup
¼ cup dried coconut (either desiccated or shaved)
¼ cup chia seeds
¼ cup flax seeds

Instructions

01 / Preheat an oven to 170 degrees and line 2 large baking sheets with reusable baking mat or baking parchment.

02 / In a large mixing bowl add all the ingredients, except the coconut, chia and flax seeds, use a spoon to fully combine

03 / Dive mix between baking trays and place into the oven for 30 minutes until golden.

04 / Remove from oven and allow to cool completely.

05 / Store in an airtight container and serve with yoghurt and fruit for a delicious breakfast.
